This is what we had for dinner tonight. It really couldn't be easier. The kids housed 'em! I'm thinking that they'd be easy to freeze too. I'll have to try it.
Black Bean Burritos
4 medium sized soft flour tortillas
15 oz can black beans drained
1/2 cup salsa
1 ripe avocado diced
1/2 cup shredded cheddar/jack mix or whatever you prefer
- Combine the beans and salsa in a sauce pan over medium heat and just bring to a simmer
- Lay out the tortillas and portion out the bean/salsa mixture, avocados and cheese
- Roll them up and serve
You could also add a little sour cream, but you don't really need to.
This recipe is easily doubled or tripled.
