Healthy Recipe: Sausage, Peppers and Pasta

This is an easy, one pot meal...And it's good for you too!  Add a salad and dinner is served.

Sausage, Peppers, and Pasta

1 lb Penne pasta, or your favorite
1 tsp olive oil
1 lb chicken sausage
1 red onion, chopped
1 green pepper, chopped
1 yellow pepper, chopped
28 oz canned tomatoes, chopped with juices (home canned is best, but you can crack a can of Contadina too)

- Cook the pasta to the al dente specifications on the box
- While the pasta is draining, add the sausage to the pot and brown over medium heat (we like to take it out of the casing or cut it into bite size pieces after it's cooked)
- Add the chopped onion, peppers and saute until the peppers are just starting to soften
- While still over medium heat, toss in the tomatoes and pasta (this helps the pasta absorb the flavors)
- Serve hot

Other great additions: artichoke hearts, spinach or escarole, mushrooms
