Recipe: Turkey Scallopini

I took a chance and threw this together a few weeks ago (there was a tremendous sale on the Nature's Pride turkey breast that I couldn't pass up).  It ended up being a hit!

Turkey Scallopini

1 lb thinly sliced turkey breast
1/4 cup flour
zest of 1 lemon
salt and pepper
1/2 cup white wine (the rest is for you)
1/4 cup water
2 tsp Dijon or brown mustard
1/2 tbs extra virgin olive oil

  • In a shallow dish combine the flour, lemon zest, and a little salt and pepper
  • Heat the oil in a large skillet over medium
  • Dredge each piece of turkey in the flour mixture and brown in the hot pan
  • Remove the turkey to a plate
  • Deglaze the pan with the wine
  • Whisk in the mustard and water and bring to a simmer
  • Add the turkey back into the pan and let simmer about 5 minutes
  • Remove and serve
We love this over brown rice with a side of steamed broccoli (my family is big on lemon on their broccoli so we put to use the zested lemon).  If you have any capers, they are a delicious addition to the sauce.
