Breakfast is Served

How many times have you heard it, "Breakfast is the most important meal of the day."  Personally, I believe all the meals are important.  Every meal is fuel and skipping any of them will make you feel bad...Skip lunch and you're cranky and yelling at everyone by dinner and starving.  Skip dinner and you end up eating a bowl of ice cream before bed, or worse, oh yes, there is worse.  So why is breakfast the most important?  In my opinion, it's not.  They're all important.  It just seems like breakfast is the easiest to forget.  I'm guilty of it too sometimes.  You fill up on coffee, do all the morning stuff (kids ready, lunches packed, beds made, etc.), then on the way to drop the kids at school, you realize, "I'm hungry."  Since I started my early morning runs, I have to eat, and eat healthy.  Lucky Charms just doesn't cut it.  My personal breakfast criteria are these: carbs, protein, dairy, fruit.  It may seem like a lot, but it's pretty easy; low fat vanilla yogurt with a handful of granola and a banana.  I love the Emerald Breakfast to Go.  Sometimes I'll make breakfast burritos and freeze them (scrambled eggs, turkey bacon crumbled up, minced red pepper, some shredded Colby Jack).  I also keep hard boiled eggs in the fridge, makes breakfast easy.  Here are a few other simple and quick ideas

  • Toast whole grain bread and place a slice of cheese and a sliced hard boiled egg on it while still warm (Hey, it's better than an Egg McMuffin) with apple slices on the side
  • Bagel with cream cheese and tomato slices
  • Cottage cheese with granola and dried fruit
  • Sliced hard boiled egg, low fat feta cheese, fresh spinach, wrapped in a tortilla
  • Whole grain english muffin with Nutella and strawberries
  • Oatmeal with cranberries and walnuts
  • Smoothies (Here's a hint, if you have yogurt close to expiration, toss it in the freezer and use it in your smoothie.  Same goes for fruit, chop it, freeze it, make a peach-berry smoothie.  I put bananas in the freezer in the peel.  Run them under water, clip the end and squeeze out the banana)
  • Waffle with peanut butter and raisins
So now you have a few tasty breakfast treats to put on the menu.  I'll bet even the kids will enjoy them.  If you've got a quick, healthy breakfast idea, please share it in the comments.  I'm always looking for delicious, new ways to start my morning.

So last week we did some hard core tushy toners, so I thought we should give the  lower half a little break.  Besides, my butt is still sore.  My goal this year is to get my stomach back...don't laugh!  I'd love to be able to wear a bikini again, not that I would, but I'd like to be able to.  Once again, I'm turning to my favorite in-home trainer.

Zucchini Enchiladas

These look and sound delicious...and they are according to the friend who shared it via Skinny Taste.  The nutritional info is pretty awesome too.

Cheesy Zucchini Enchiladas
Servings: 4 Serving Size: 1 large enchilada Old Points: 5 pts • Points+: 7 pts
Calories: 258.7 • Fat: 13.5 g Protein: 22 g Carb: 30.2 g Fiber: 16.9 g
 

Ingredients:


  • cooking spray
  • 1 tsp olive oil
  • 2 cloves garlic, crushed
  • 2 medium scallions, chopped
  • 1/4 cup cilantro, chopped
  • 2 medium zucchinis, grated
  • kosher salt and fresh ground pepper
  • 1 1/2 cups grated reduced fat mexican blend cheese (Sargento)
  • 4 Large La Tortilla Factory Low Carb tortillas
  • enchilada sauce*
  • chopped scallions (optional)
  • chopped cilantro (optional)
  • Directions:
    Preheat oven to 400
    Over medium heat, saute garlic and scallions in olive oil till soft
    Add zucchini and salt and pepper to taste, cook for 4-5 minutes
    Remove from heat and stir in 1/2 cup of cheese
    Divide between the 4 tortillas, roll, place seam side down  in sprayed casserole dish
    Cover with enchilada sauce and cheese and bake for 20 minutes

    *Enchilada Sauce
    • 1 garlic cloves, minced
    • 1 tbsp chipotle chilis in adobo sauce (optional for more heat)
    • 1 cups tomato sauce
    • 1/4 tsp chipotle chili powder (to taste)
    • 1/4 tsp ground cumin
    • 1/2 cup fat free vegetable broth
    • kosher salt and fresh pepper to taste
    For the enchilada sauce: in a medium saucepan, spray oil and sauté garlic. Add chipotle chile, chili powder, cumin, broth, tomato sauce, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 5-10 minutes. Set aside until ready to use.

    Rock 'n' Roll for Girls on the Run!

    When I found out that the March 17th Rock 'n' Roll USA half marathon in DC was sold out when I went to register, I was so disappointed that I might have shed a few tears.  I was to run it with my two best running buddies.  I got a little flutter of excitement when, a couple of weeks later, one of them forwarded me an RnR email regarding spots through charity.  Again, I was disappointed because the initial charities that I looked at required that you already be registered...waahhhh!  I took a chance and emailed the DC chapter of one of my favorite organizations, Girls on the Run (one of listed charities).

    Girls on the Run"Girls on the Run® is a life-changing, character development program for girls in 3rd through 8th grade.  Our mission is to inspire girls to be joyful, healthy and confident using a fun, experience-based curriculum which creatively integrates running. Girls on the Run – DC is an independent council of Girls on the Run International, founded in 1996, by Molly Barker, a visionary, Ironman triathlete. Today, there are nearly 180 locations across the U.S. & Canada, with new locations added each year.  Girls on the Run® combines training for a 5k (3.1 miles) event with healthy living education. We use exercise, positive reinforcement, and encouraging role models to help girls discover the confidence they need in the critical pre-teen years and beyond."

    I almost fell over when they responded that they had 10 bibs left and would register me for the RnR.  I just had to sign up to be a SoleMate and commit to raise $450 for GOTR.  I jumped at the opportunity.  When I got the confirmation that I had a bib, I was so excited that I actually could not sleep!  Now I'm not only running the RnR DC half with my friends, but I'm doing it to raise money for an amazing organization.  I would so greatly appreciate if you could tweet this post, or share it on Facebook.  Let your followers know that donations are tax deductible, and lots of companies have matching programs.

    Also, if you're in the DC area, there may still be bibs left and you could join us.  There area also lots of RnR volunteer opportunities, or just come out and enjoy the music...but don't for get to make your signs and show your support!  In the mean time, I encourage you to check out GOTR and get involved.

    No Butts About It!

    What's the number one excuse for not exercising?  "I don't have time."  Wrong!  If you have 15 minutes, you have time.  And if you don't have 15 minutes, getting up 15 minutes earlier won't kill you.  Fit Link has your glute workout this week.  It's challenging, but it's fast.  If you're a beginner, just try 1 set of each exercise.  Something is better than nothing.  So no excuses, get your tush up and tell yourself, just a little time can equal a little butt!

    First Snow Run!

    Good Morning from the snowy northeast!  I woke up bright and early (OK, not bright, it was 4:45) with a smile on my face because I knew it would be my first snow run of the season.  I've been looking forward to this since yesterday morning's alert on WeatherBug.

    First of all, I love my early morning runs.  It's quiet, calm and peaceful, no hustle and bustle...all rare things in my crazy life.  But the early morning run during the first snow fall, well, that is a thing of beauty.  There's something fulfilling about seeing those first New Balance tracks on the sidewalk and knowing that I put them there.  Even though it's still dark, with not a ray of sunlight, it's just a little brighter because everything is covered in white.  The quiet is a little quieter, as the blanket of snow absorbs the sound of any far of snowplows.  The air is a little clearer as the falling flakes filter out the impurities.  Everything in the world seems innocent.

    So if you have the chance, get out in those early morning flurries.  While everyone else is hiding under their blankets from the morning and the weather, go take advantage of it.  Find the serenity in your first snow run of the season.

    Do I really need a Kindle?

    Every once in a while I come across a free Kindle book and think, "Hmm, wish I could get that book for free."  The problem is, I don't have a Kindle.  I also don't really need or want one.  I do think they are really convenient and totally worth it, if you're a big reader and have the time.  Reading is a luxury, and when I do have time to read, there are other things that I want to do.  Besides, I really like TV.  Anyway, even though I'm still trying to finish a book that I started when I was pregnant with my 4 year old, there are some cool Kindle books that I wouldn't mind browsing; but obviously, a Kindle would be a waste of money for me.  I'm sure I'm not the only one.  Here's the solution: Kindle has free reading apps.  Yep, no kidding!  You can get them for your iPhone, BlackBerry, PC, etc.  So go ahead and get your free Kindle books!

    Stuffed Chicken Parmesan

    Stuffed Chicken ParmesanEat Better America is one of my favorite sites for healthy recipe alternatives (in case you haven't noticed).  This chicken parm looks phenomenal and will be added to my February menu plan.  Of course, I will not be using canned pasta sauce (which would be grounds for divorce in this house), but other than that, I'll actually stick to the recipe!  The only other thing I might change is pounding out the chicken.  Whenever a recipe calls for this, I take the easy way out...I just cut a slit in the chicken breast making a pocket.

    Stuffed Chicken Parmesan
    Nutritional Info:
    1 serving: Calories 290 (Calories from Fat 100); Total Fat 11g (Saturated Fat 4 1/2g, Trans Fat 0g); Cholesterol 100mg; Sodium 450mg; Total Carbohydrate 10g (Dietary Fiber 2g); Protein 38g % Daily Value Vitamin A 80%; Vitamin C 2%; Calcium 15%; Iron 15% Exchanges 1/2 Starch, 0 Other Carbohydrate, 0 Lean Meat, 5 Very Lean Meat, 1 1/2 Fat Carbohydrate Choices 1/2

    Prep Time: 20 mins
    Start to Finish: 55 mins
    Serves: 6

    6 boneless skinless chicken breasts (about 5 oz each)
    1 box (10 oz) Cascadian Farm organic frozen spinach, thawed, well drained
    2 oz 1/3-less-fat cream cheese (Neufchâtel), softened
    1/4 cup shredded Parmesan cheese
    1/2 teaspoon dried basil leaves
    1 clove garlic, finely chopped
    1/4 cup fat-free egg product
    12 stone-ground wheat crackers, crushed (about 1/2 cup)
    1 teaspoon dried basil leaves
    1/2 teaspoon pepper
    1 cup Muir Glen® organic Italian herb pasta sauce
    1/4 cup shredded mozzarella cheese (1 oz)


    1  Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
    2  In medium bowl, mix spinach, cream cheese, Parmesan cheese, 1/2 teaspoon basil and the garlic until blended. Spread about 1 tablespoon spinach mixture over each chicken breast; roll up tightly. If necessary, secure with toothpicks.
    3  In small shallow bowl, place egg product. In another small shallow bowl, mix cracker crumbs, 1 teaspoon basil and the pepper. Dip each chicken breast into egg product; coat with crumb mixture. Place seam side down in baking dish.
    4  Bake uncovered 20 minutes. Pour pasta sauce over chicken; sprinkle with mozzarella cheese. Bake 10 to 15 minutes longer or until thermometer inserted in center of chicken reads 165°F. Remove toothpicks from chicken before eating.

    Down With Crunches!

    The holidays are over.  The new year has begun.  If you haven't already, it's time to get back on track (me included).  I realize that I've slacked in posting the monday exercises, but you no longer have an excuse!  As I mentioned to the fit club, this year in conjunction with my speed and distance training, I need to do some serious core work.  Some of you may remember my complimentary in-home workout with TrainerDiva.  My butt was kicked in all kinds of creative new ways.  So naturally, when I'm looking for ways to work my core where else would I go?

    According to our friends at TrainerDiva, you may be able to ditch the crunches...

    "Crunches do little to banish belly fat anyway!  For flattening your abs quickly, the best way is to target the hard to reach core muscles.  Specifically, the transverse abdominals.  This muscle wraps around your midsection acting as a girdle and sucking in the flab.  Strengthening this muscle will also improve your posture.  Sweet!  Research has shown that moves which stabilize the midsection, like the plank, are 34 % more effective at targeting the transverse abs than regular ol' crunches."

    So, due to naughty children and technical difficulties, Tastey Tuesday is a day late.  Worth the wait though.  I found this recipe for one of my favorite brunch dishes (actually, I could also eat it for dessert, or after the kids go to bed so I don't have to share).  By way of Eat Better America, I give to you "Healthified Monkey Bread"!

    1/4 cup sugar
    2teaspoons ground cinnamon
    2cans (16.3 oz each) Pillsbury® Grands!® Homestyle refrigerated reduced-fat buttermilk biscuits
    1/2cup chopped pecans or walnuts
    3/4  cup fat-free caramel topping
    2teaspoons vanilla
    1.Heat oven to 350°F. Spray 12-cup fluted tube cake pan with cooking spray.
    2.In 1-gallon resealable food-storage plastic bag, mix sugar and cinnamon.
    Separate both cans of dough into 16 biscuits. Cut each biscuit into quarters. Add biscuit pieces to sugar mixture. Seal bag; shake to coat. Layer biscuit pieces and pecans in pan.
    3.  In small bowl, mix caramel topping and vanilla. Pour over biscuit pieces.
    Bake 40 to 45 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes.
    Invert onto serving plate. Serve warm.

    What I Think:
    The Precision Pro scale is sleek, light-weight and easy to use.  It takes up very little space (I even have room on my counter and I have a galley kitchen).  And since it comes in a variety of colors, I was able to pick the one that matched the stainless finish on my appliances.  Another nice thing about the small size and weight is that you can tuck it in your suitcase if you're going away (yep, you even have to watch what you eat on vacation).

    That's the fashion, now on to the function.  This digital kitchen scale couldn't be easier to use.  There are only 2 buttons, that are clearly marked.  One to turn it on and off and reset, and one to choose the measurement unit (grams, ounces, kilograms, pounds).  You turn it on, choose the unit and place your food on scale to get the measurement.  The display is large and easy to read.  The scale is sensitive enough to register the addition of even one piece of linguine (trust me, I want to get every bite out of my 2ozs).  Another nice function is the Tare.  If you've got a rolly-poly food, like grapes, you can put a bowl on the scale and reset the weight to zero.  Then place the grapes in the bowl for an accurate measurement.  A bonus: the included Calorie-Factor Guide.  The Calorie-Factor is a USDA calculated number that represpents calories/gram of food.  EatSmart has provided the Calorie-Factor for nearly 1000 different foods, making it much easier to figure out just how many calories you're consuming each day.

    I don't think there's anything I'd change about this product.  Now for the fun stuff...

    Back in early December, I received a package of Boogie Wipes to test and review.  Oddly enough, I had not a boogie to wipe!  Of course that didn't last, and we have since put the package to good use.

    What I Think:
    My first impression was that Boogie Wipes are just like baby wipes...they are not.  Though a little chilly and damp to use as a regular tissue, they definitely make a difference when it comes to the crusties.  I used to think, "How can those kids' mothers let them run around with a crusty nose like that?"  Then I had a kid who screamed bloody murder every time I tried to wipe the dried snot.  It's more like picking, and who wouldn't cry about someone holding them down and trying to scrape the nose spackle off their face with a dry tissue.  The Boogie Wipes have seemed to solve that problem.  I found if I let them hold the wipe to their nose for just a few seconds, the saline solution softens the crust and it wipes right off.  So much easier than using the average tissue, and softer than the average baby wipe.  I also like the fact that I'm not wiping a bunch of chemicals across my kid's face.
    My kids actually ask for a Boogie Wipe now when they have a stuffy beak.  I'd definitely recommend keeping a pack in the diaper bag during snot season.  There's also a classroom pack for teachers.  Get the kids involved by taking the Save the Sleeve Pledge, and don't forget to join the  Boogie Bunch to get your coupon.

    What I Think:
    These are not the old Lee Press-on Nails...I mean, not that I'm old enough to know what those are {wink, wink}.  I received Broadway's imPRESS Manicure complimentary, in my holiday VoxBox from Influenster last month.  I must admit, I was skeptical.  I slapped them on before my husband's work party and crossed my fingers.  They were easy to apply, just match up the size, pull the tab, and press it onto your natural nail.  Barely took me 5 minutes.  The real test was to wrangle my 2 and 4 year olds and keep those suckers attached.  Surprisingly, they stayed on!  Even more to my surprise was the compliments that I got.  Applied correctly, they do look like an acrylic set.  For someone like me, who has barely enough time to brush my teeth, let alone get a manicure, but likes to dress up to go out on occasion, imPRESS is the answer.  It looks nice, yet is inexpensive, quick, and stays on through an afternoon of time outs.  What more could a mom want?  I'll definitely use them again the next time I have something to dress up for.

    A New Year, A New Year's Resolution...to Toss!

    It's time to make, and break, those New Year's resolutions.  Every year, we make resolutions that we know will be tough to keep...and then we either break them or forget about them.  Number 1 resolution?  Lose weight.  I've already been contacted by several people who want to lose weight.  I'm going to do something crazy, and tell you to throw that resolution out the window!

    A few months ago, I read an article about setting goals for running.  One thing that stuck in my head, is that people who make their goal "weight loss" are dooming themselves to fail.  I think the reason this may hold true is because, when you decide you have to lose 30 lbs and don't see significant progress right away, it's easy to say "Oh, this isn't working.  I quit."  Another thing to consider is  that when you're losing weight the healthy way, you should be adding muscle.  And though muscle does not weigh more than fat (a pound of muscle weighs the same as a pound of fat), a pound of muscle does take up significantly less space than a pound of fat...also, it jiggles less.

    Another reason that I'm asking you to throw your "weight loss" goal out, is because giant goals that are far away just seem harder to attain.  Face it, if your goal is to lose 30 lbs, it isn't going to happen fast.  At least it shouldn't, or you've taken an unhealthy approach to losing it and will probably put back 35 and have an even bigger weight loss goal by summer.  If you're goal is to run for 10 minutes straight (yes, I know, running is not for everyone, but man, it will help you shed pounds), you can do that in a month...and you'll probably lose 4-5 lbs whether it's your goal or not. 

    So here is my suggestion, instead of making a resolution, resolve to make healthier choices.  Change the little things and the big changes will happen on their own.
