Thursday is my busy day.  It's grocery day.  Which means it's also clean and prep the food day.








  • 5:00 - cross train, pt exercises, shower, ice ankle
  • 6:00- kids up, get them their fruit and milk, start breakfast, feed monsters
  • 7:15 - get the kids dressed, teeth brushed, beds made, back pack packed
  • 8:00 - clean up
  • 8:15 - get the kids ready to leave, shoes, sunscreen, hats, back pack
  • 8:45 - bank
  • 9:00 - drop Paddy off at school
  • 9:15 - produce stand, gas station, Acme, Giant
  • 11:30 - pick up Paddy from school
  • 11:45 - home, unload car, get the refrigerated/frozen stuff put away asap
  • 12:30 - lunch for the kids
  • 1:00 - nap for the kids, lunch for me and a little peace and quiet
  • 1:30 - laundry in, put away the pantry items, wash all 30-40lbs of produce, cut and prep broccoli, carrots, celery, cucumbers, peppers for quick snacks, hard boil a dozen eggs, cook a pound of pasta for big salad night and for big salad at work Friday, portion out snacks, wash and cut lettuce and spinach for salads (I just keep it stored in my salad spinner), fold laundry
  • 4:00 - kids up, get outside for a walk, bikes, kickball, bubbles, whatever
  • 5:00 - put out dinner (Thursday is big salad night because all I have to do is put everything on the table and everyone makes their own salad)
  • 6:00 - dinner cleaned up, kids in the shower, jammies on, teeth brushed
  • 7:00 - kids in bed, do any miscellaneous chores, finally sit down and ice
If that's not a packed enough day maybe Friday
  • 4:00 - coffee run with friends (Yes, that's a.m., we meet, run, get coffee, walk back)
  • 5:15 - home, shower, breakfast
  • 6:00 - kids up, get them their fruit and milk, start breakfast, feed monsters, get the pizza dough made for dinner
  • 7:15 - get the kids dressed, teeth brushed, beds made, back pack packed
  • 8:00 - clean up
  • 8:15 - get the kids ready to leave, shoes, sunscreen, hats, back pack
  • 8:45 - work
  • 5:15 - home, get pizza made and veggies and dip out
  • 5:30 - pizza and movie night 
  • 7:30 - kids cleaned up and put to bed, finally sit down and ice
What is my point in sharing all of this?  Don't complain about not having enough time to exercise!  Just admit to being lazy, hey we've all been there, and do something to change it.  Yes, that might mean getting up earlier.

From the Boot to the Beach via Half Marathon

I'm all signed up for my next half marathon!  I'll be running the Wild Half at the Jersey shore in August.  I have to be honest, I'm not where I thought I'd be as I embark on my training for this half.  If you remember, DC, was a wonderful, yet brutal, experience.  I was off for a week and didn't have any improvement, so into a boot I went...for 3 weeks.  After multiple visits to my wonderful sports medicine doctor at PennMed, x-rays, and an mri, it turns out that it was ligament subloxation (basically the ligament, in my case both, rolls out of place).  My family doctor said that I have more "wobble" in my ankles than most people.  It will likely happen again, possibly to the other ankle too.  So after the boot came the brace and the physical therapy.  And the brace is now my newest running accessory.  It's not the worst thing in the world, but I do feel like I'm starting all over again, and that is what bothers me.

I've been running 2 or 3 miles at least 3 days a week for about a month (which is frustrating since I was running 13 in March).  I'm also continuing with my physical therapy exercises, boring but totally necessary.  And I've stepped up the cross training.  So I'm going into this slower, but stronger...I think.

I'll keep updating as I make my way through training, many bags of frozen peas (way better than ice) and cross the finish line on the beach of the Wildwoods.

What I think:

My family was headed to a friend's for dinner and we offered to bring dessert.  In taking out the ingredients, I realized that I had no oil...or so I thought.  I had just received my coconut oil from Tropical Traditions, so I figured I'd give it a whirl.  When I first opened the jar, I thought it had gone bad during shipment.  It was a cloudy, solid consistancy.  After reading the label (Duh), I realized that it's supposed to look like that at temps under 76 degrees.  Oh and I also noticed that it has less calories per serving than other oils, bonus!  I followed the directions and liquefied the oil.  I think this is the first time I've ever seen a clear cooking oil.  I kind of like that.

Anyway, back to the coconut oil brownies...Delicious!  Everyone loved them.  I've used the recipe before and the only difference in using the coconut oil was the slight coconut flavor, which actually enhanced the taste of the brownies.  I will definitely use it again in my baking.  I'm also looking forward to trying some of the recipes on the on the Tropical Traditions website and exploring all of the other uses for coconut oil.

Wednesday
steak pizzaiola, with peppers and portabella mushrooms over pasta, sauteed spinach
Thursday
it's big salad night!
Friday
Grilled veggie pizza
Saturday
Grilled fish, zucchini and orzo salad

Simple Tips for a Healthy You

Here are a few things you can do to make it a little easier to be healthy...






  • Wash and prep all of your produce when you get home.  It makes your fruits and vegetables more accessible.  It will be just as easy to grab an apple as a bag of chips.  We have a large container that gets filled with chopped veggies for snacks and salads.
  • You can substitute fat free yogurt or Greek yogurt for mayonnaise in most recipes.  Seriously, I do it all the time and my husband has no idea.
  • If you "don't have time for breakfast", prep everything you'd put in a smoothie, portion into plastic baggies, and place in the freezer.  I have a weeks worth of smoothies ready to go.  My portions contain 2.5 oz strawberries, 1 oz fat free Greek yogurt, 1/2 tsp flax seed meal.  I run them under water, pop them in a cup with a frozen banana and 1/2 cup of Fruit and Protein (you can use whatever liquid you prefer) and hit it with my immersion blender.  Breakfast is served.
  • Buy 2 dozen eggs.  Keep one fresh and hard boil the other for something quick to grab for breakfast.  Do it on grocery day or you may end up letting them just sit and have to make a gigantic pan of scrambled eggs at the end of the week.
  • Portion out your trail mix, pretzels, nuts, etc.  No, 1 bag of chips is not a single serving.
  • When you're eyeing up the ground meat, think about grabbing ground turkey too.  Mix the meats half and half.  You'll cut the fat and calories, but still get the flavor and texture.  This is another one that I've slipped by the husband.

Recipe: Turkey Scallopini

I took a chance and threw this together a few weeks ago (there was a tremendous sale on the Nature's Pride turkey breast that I couldn't pass up).  It ended up being a hit!

Turkey Scallopini

1 lb thinly sliced turkey breast
1/4 cup flour
zest of 1 lemon
salt and pepper
1/2 cup white wine (the rest is for you)
1/4 cup water
2 tsp Dijon or brown mustard
1/2 tbs extra virgin olive oil

  • In a shallow dish combine the flour, lemon zest, and a little salt and pepper
  • Heat the oil in a large skillet over medium
  • Dredge each piece of turkey in the flour mixture and brown in the hot pan
  • Remove the turkey to a plate
  • Deglaze the pan with the wine
  • Whisk in the mustard and water and bring to a simmer
  • Add the turkey back into the pan and let simmer about 5 minutes
  • Remove and serve
We love this over brown rice with a side of steamed broccoli (my family is big on lemon on their broccoli so we put to use the zested lemon).  If you have any capers, they are a delicious addition to the sauce.

My 4yr old got his first race medal!

I will never forget the feeling of receiving my first race medal at the Philly Rock n Roll Half Marathon.  Today I got to not only see my son receive his, but place it around his neck....And that feeling was even more amazing!  Paddy spent 5 Sundays earning it and he deserves to feel proud.  He ran the 50 yard dash in the Healthy Kids Running Series at Wilson Farm Park in Wayne, PA.  He "trained" by having me mark out 50 yards and running it over and over and over as fast as he could.  He even had me time him.  He also regularly, yet very slowly runs a mile and a quarter with me.  It all paid off, today he finished 3rd.  And he was so proud that he was telling anyone who would listen as we walked to the pavilion for our family picnic afterward.  He has placed 4th the past 4 races, even after a big fall last week...the kid is consistent.

Now, my little Paddy-cakes has short little legs and isn't likely to be breaking any speed records.  So we've talked about setting a PR, and that in running it's just important to time yourself, regardless of everyone else.  I've also told him that mommy won't be coming in first any time soon (or ever), but I just want to beat my last time.  This series has given Paddy and lots of other kids the chance to participate in an organized sport where they learn that it's not just about competing with each other, but with themselves.  And since it's a series, the kids have the opportunity to really improve.  I realized this today when my friend's son asked for his time.  He came in dead last several times, but what was important to him was whether or not he beat his own time.  He didn't care where he placed, he cared that he did it and did it to the best of his ability.  And isn't that what's important in more than just running, but in life?

Recipe: Homemade Pizza, Yum!

I don't think people realize how easy it is to make pizza from scratch.  Friday has been pizza night in our house for a long time.  Since I used to toss pies in another life, and take out is so expensive, I decided to start making it myself at home.  Plus since I used to work in a pizza shop, I know just how much oil and sugar are in the dough and I could have a little more control over that.  So here is my recipe and our new Friday fave:


Pizza Crust
2 tsp dry active yeast
3/4 c warm water
2 cups flour (you can use 1/2 whole wheat) + 1/2 cup for kneading
1 tsp salt
1/2 tsp sugar
2 tsp garlic powder
1 tsp extra virgin olive oil

- proof the yeast (dissolve in the water, it will get frothy or foamy looking)
- combine the flour salt, sugar, and garlic powder
- stir in the yeast mixture and oil and start working it into the flour until a ball forms
- knead dough on a well floured surface until you can form it into a smooth ball
- place in an oiled bowl and cover
- let rise for 60-90 minutes until it's doubled in size*
- toss or roll out on a floured surface
- place on a preheated sheet or pizza stone spread with tomato sauce and cheese and add your favorite toppings
- bake at 450 for 20 minutes

*I make my dough in the morning and instead of leaving it out, I let it rise for about 30 minutes and toss it in the fridge until I'm ready to toss it at dinner time.

Many people don't eat right because they're throwing something together last minute, or grabbing take out, or just skipping the meal...All BAD!  OK, sometimes you can throw together a healthy meal last minute, but not always, so why take a chance?  I gave and assignment to my RHF Fit Friends; create a menu plan.  
Here were the guidelines:
There are plenty of recipes posted on the RHF page (feel free to add to it if you find something good). And you can also use Food on the Table.
1) 7 dinners w/ recipes and a shopping list of ingredients.
2) Each meal must have protein, vegetables, and healthy carbs (count your potatoes and corn on the cob as carbs NOT veggies).
3) Nothing out of a box (ie mac and cheese, hamburger helper, etc). If you need help ask, but make sure you try first. When you're done, post on the RHF page and let everyone know that you've planned a week's worth of healthy meals for you and your family!


Since it's only fair, I'm posting my menu plan for the week and the groceries I'll need to make it happen.


Sunday: Pork roast braised in tomato sauce, pasta, salad (pork roast, San Marzano tomatoes, basil, parsley, pasta, romaine, fresh spinach, carrots, celery, cucumbers)
Monday: Kabobs, corn on the cob (lean beef, peppers, red onion, yellow squash, corn on the cob)
Tuesday: Turkey scallopini, brown rice, blanched green beans w/ lemon (thin sliced turkey cutlets, brown rice, green beans, lemons, garlic)
Wednesday: Chicken enchiladas and beans (chicken, tomato sauce, cumin, soft tortillas, cheddar cheese, pinto beans)
Thursday: Big salad (romaine, fresh spinach, pasta, celery, carrots, chick peas, cucumbers, tomatoes, cheddar, hard boiled eggs, croutons)
Friday: Homemade pizza, veggies and dip (yeast, tomato sauce, mozzarella, carrots, broccoli, cucumbers)
Saturday: "Take out night" sliders, homemade oven fries, salad (ground turkey, pickles, cocktail tomatoes, buns, Idaho potatoes, lettuce, veggies)

Healthy Recipe: Black Bean Burritos

This is what we had for dinner tonight.  It really couldn't be easier.  The kids housed 'em!  I'm thinking that they'd be easy to freeze too.  I'll have to try it.



Black Bean Burritos


4 medium sized soft flour tortillas
15 oz can black beans drained
1/2 cup salsa
1 ripe avocado diced
1/2 cup shredded cheddar/jack mix or whatever you prefer

- Combine the beans and salsa in a sauce pan over medium heat and just bring to a simmer

- Lay out the tortillas and portion out the bean/salsa mixture, avocados and cheese

- Roll them up and serve

You could also add a little sour cream, but you don't really need to.
This recipe is easily doubled or tripled.

Healthy Recipe: Sausage, Peppers and Pasta

This is an easy, one pot meal...And it's good for you too!  Add a salad and dinner is served.

Sausage, Peppers, and Pasta

1 lb Penne pasta, or your favorite
1 tsp olive oil
1 lb chicken sausage
1 red onion, chopped
1 green pepper, chopped
1 yellow pepper, chopped
28 oz canned tomatoes, chopped with juices (home canned is best, but you can crack a can of Contadina too)

- Cook the pasta to the al dente specifications on the box
- While the pasta is draining, add the sausage to the pot and brown over medium heat (we like to take it out of the casing or cut it into bite size pieces after it's cooked)
- Add the chopped onion, peppers and saute until the peppers are just starting to soften
- While still over medium heat, toss in the tomatoes and pasta (this helps the pasta absorb the flavors)
- Serve hot

Other great additions: artichoke hearts, spinach or escarole, mushrooms

REVIEW: Just for Men AutoStop

So obviously I wouldn't be using a Just for Men product, however...

My husband, Tony, has a great head of hair, but after 2 kiddos, he's been sprouting some grey around the temples.  Though, he often says it's the wife, not the kids.  Hmm.  He's not super self conscious of it, but when I was contacted by Smiley360.com with a review opportunity, he reluctantly agreed to participate.  I have to be honest, I wasn't overjoyed about the idea of my husband and a bottle of hair dye and the mess that I'd have to clean up.  So I was relieved when the complimentary package of Just For Men AutoStop arrived and I saw that it was pretty much fool proof; and with the cool little applicator comb attached there was little chance for a big mess.

So I handed him the box and sent him off to read the directions and get to work.




Obviously it was pretty easy to use.  Tony was able comb the dye through and get his entire head covered with no assistance.  All I had to do was set the timer when he had the product applied.  And even that wasn't really necessary since the solution shuts itself off.  Best part: No Clean Up!


How did the finished product turn out?  It was great.   >>>
The Just For Men AutoStop colored the grey without leaving Tony's hair color looking flat, very natural.  In fact, we went to a party for his brother in law the same night and the only thing anyone said was, "Ya look good, dude."

It was easy enough for Tony to do it himself.  It didn't take very long.  No mess.  And the color looks natural.  I'd say it gets 2 thumbs up.

Guest Post: Fat to Fast by Katie Shireman

In life everyone needs a good friend and a little inspiration.  Katie is mine, and I am grateful to have her.

·         I have been heavy all my life. I am tall, 5’11”, so most people just say, “Well you are tall.” However, tall is no excuse for being fat! I recall being 113 lbs in 3rd grade. I was also 5’4”. Throughout middle school and high school, I was always playing basketball and very active, I was just a big girl.  I was between 180-195 lbs. And wore around a size 14.  I went to college fall 1996 kinda heavy, but not too heavy.  I wore a size 12 or 14 in GAP jeans, so not huge.  But, as college goes, I just got bigger.  The breaking point was my dad saying to me, as I was reaching for more stuffed shells, “that’s enough, you look like a house.”  That was December 26, 1998. It was cool. My dad and I have an excellent relationship.  As I drove the 2 hours home that night, I thought about it, and …..he was right. My pants for that Christmas were a 22/24 – big lady size.  Way too big for someone who is 5’11” So, one of my roommates and I started running. The first day we ran a block, turned around, lit a cigarette and walked home. For real. I smoked 3 packs a day at that point. Yep, fat and a smoker.  The next day, we ran 2 blocks, lit a cigarette, and walked home.  The third day, we ran 4 blocks, to the bar, had a beer, and of course a smoke, and walked home.  We just kept adding distance, and lessening cigarettes (and beer), til we could run a good distance.  I lost 70 lbs from December 27, 1998 to June 13, 1999. It was amazing! My senior year of college was my thinnest ever!  As I graduate, moved, left college and started ‘real life,’ I continued to run. I stopped smoking.  Cold Turkey. And I lived through it!  I have run on every vacation, from every house I lived in, and on almost every track, trail, paved path there is to run. I have grown to thoroughly enjoy running. When I got pregnant with my son, March 2006, I had to stop running, as per my OB. I put on 68 lbs during his pregnancy. He was born November 2006.  It was so bad that 6 weeks ppd and right before Christmas, I was crying in the GAP because I was squeezing in a 16. I had been down to a 6-8 prepregnancy, so this was super traumatic. I resumed my running 2 months ppd and some of the weight came off. Then, I got pregnant with my daughter in January 2008. I ran Every. Single. Day during her pregnancy, despite such bad morning sickness (or all day sickness) that I stopped to vomit on the trail.  There are still some places I cannot run by because of the amount of times I stopped to puke in the woods.  However, I put on only 26 lbs.  I delivered her on October 20, 2008, and  I ran one week later, October 27, 2008. It was  only 1.5 miles, but it was something.  I bounced back super fast.  A little over 3 years ago, I was blessed to meet 2 guys at my gym who were starting to run.  We started the now infamous 4a runs. We have since done different things: one is a triathlete, one is an ultra runner, and I am a marthoner, but still meet to run occasionally.  Last year, as my New Years Resolution (maybe after too much wine), I decided I’d do a marathon.  And, I did.  I actually did 2....in 10 weeks. Never say never!
·         The human body is an amazing thing.  I now wear a small and a 4-6 in jeans, of course depending on the brand and cut. As for the food part….I have been vegetarian since I was about 14. So, I just had to watch the ‘junk’ and focus more on good stuff.  I eat my 10-12 fruits and veggies each day. I lay them on the counter to remind myself to eat them. I am super regimented.  I eat a lot of the same things….I like them… and I know what is in them.  And while training I am even more regimented.  Like no alcohol, nothing that will make my stomach hurt or make me feel ‘crappy.’  Not always fun but necessary.
·         I am setting the best example ever for my son and daughter.  They know mommy runs and gets up early to run and go to the gym. My son gave me a sticker today that said ‘winner.’ He told me it was because I won my race yesterday.  I told him not really, mommy didn’t go to win, just for a personal win.  He said,” well you are a winner then.”  Love him!  He runs.  Fast.  And he is 5.  I have to tame that, but it will come in time.  I am thrilled my kids prefer to ride bike, run, and be outside than be indoors with a TV or video game on.  Lead by example, they will follow. 
·         I write this the day after I finished my 3rd marathon....in 8 months.  My goal for my first was under 4 hours.  I was 4:08:36.  I cried.  My PR time yesterday:  3:55:08. (booyah!!  13 min 28 sec faster!)  I cried again.  For a different reason.

I am proof you don’t need gimmicks or fad diets and programs. Old fashioned exercise, a good diet, and some determination (and maybe thick-headedness!) gets you a long way.  The human body is amazing.  It reacts to what you do to it.  Now, go do something good for your body and your family!  -Katie

Enjoying our Christmas Present: The Zoo

Every year my Grammie gives everyone cash for Christmas.  Usually we put it in the bank account and we don't really earmark it for anything.  This year we decided to put it toward something specific that the entire family could enjoy, the Philadelphia Zoo.  Usually a trip to see the monkeys or the big cats is a special treat that you only get to do once or twice a year.  We figured that we could give the family the gift of animals, outdoors, and exercise any nice day of the year.  Today was the first time we were able to take advantage of our membership.

Paddy was off of school and I hate having the kids sitting around.  The forecast was for mild weather and with public schools in session, the zoo would be the perfect place to spend the day.  So we slapped on some sunscreen, packed our lunches, and jumped in the big ol' minivan.  I took a chance and left the stroller in the car.  I knew Paddy could handle it, but it was an experiment with Micky to see how far we'd get through the enormous zoo.  They only really wanted to see the tigers and the monkeys, so I figured we'd get those out of the way just in case the Mickster's short, little legs couldn't make the whole trip.  Turns out, that was just the beginning.

We walked, leisurely of course, visiting all of the animals along the way.  We learned the difference between apes and monkeys (monkeys have tails, apes don't), some ducks are runners too, and that porcupines are plant eaters.  Paddy got to pet a duck and Micky found that he loves zebras.  The otters entertained us, and we decided to be Loraxes and take care of trees (the theme this year at the zoo).  We had a picnic and we walked for hours, even Mick.  We all definitely got our exercise and I was sure it would be a quiet ride home...Wrong!  They talked the entire time about their favorite animals, the things they learned, and on and on, and the conversation even continued right into dinner.  We had an amazing day learning, playing, and being outside.  Turns out the zoo is a great family gift...And we'll be enjoying it for the rest of the year!
